Some evenings are simply dinner. Others become stories you carry for a lifetime. Dom Pérignon & The Sea is an Incredible Occasion in the truest sense — a convergence of place, prestige and people that exists on 4 August, and never again.
A private residence on Hayman Island opens its doors to just eleven guests for a journey through time — four extraordinary Dom Pérignon vintages, each one a chapter, each one inseparable from the ocean that surrounds this place.
As the sun falls over the Coral Sea, guests will move through five courses drawn entirely from the waters at our doorstep. Spanner crab, Pacific oysters, hand-dived scallops and local coral trout — ingredients at the peak of their moment, paired with Dom Pérignon vintages at the peak of theirs.
The evening’s centrepiece is rare by any measure. Dom Pérignon P2 2008 represents the second life of an already legendary vintage — a Champagne that has spent nearly two decades in the cellar, reaching a depth and complexity that very few will ever experience. Only a handful of bottles exist in Australia. Several of them will be opened here, on this night, at this table.
Alongside it: the elegance of Vintage 2017, the luminous precision of Vintage 2015, and the singular beauty of Rosé 2009 — a progression that moves from freshness through texture to something approaching the profound.
