Christmas Eve on Hayman Island starts as the sun goes down over Amici, where the kitchen moves out to meet you — wood-fired pizza pulled straight from the oven, pasta rolled and cut to order, risotto finished tableside. Around it, a table of antipasti and chilled seafood, a Christmas carving station, and a Dolci di Natale spread of panettone, pandoro, tiramisu, cannoli and torrone to close the night. A glass of Prosecco greets you at the door.

On December 24th, Pacific & Bam Bam welcomes you to a warm and festive evening, serving their regular à la carte menus. A perfect occasion to savour signature dishes in an exceptional setting.

There’s a particular kind of Christmas that only happens here — one with oysters shucked to order, Moreton Bay bugs stacked high, king prawns and crab pulled from an ever-changing seafood market. The Reef Table brings all of it together at Pacific: a raw and ocean bar, traditional carving with all the trimmings, and a Christmas dessert marketplace to finish. A full beverage package is poured throughout, including Veuve Clicquot Champagne and a run of premium New Zealand and Barossa wines.
